Starting with Green Tomatoes.
Green tomatoes are a rich source of vitamin C and fibre which are good for your immune and digestive systems. Green tomatoes also contain tomatine. Scientists believe that a diet filled with fibre and tomatine can reduce your risk of many diseases including cancer and heart disease.
In fact, green tomatoes are known to be better for you than red tomatoes for certain things.
Such as premature aging!

Green Tomato Chutney
This chutney is a happy end for the tomatoes which haven't ripened in your garden this year, helping to store your fresh garden produce for the winter.
It is perfect to make as a gift or to act as an accompanion to ham or cauliflower cheese.

Recipe Makes
12 x 200ml jars
1kg cooking apples (Bramley Seedling or Grenadier), peeled and diced
450g onions, chopped
1kg green tomatoes, chopped (no need to peel)
2 teaspoons
ground ginger
2 teaspoons
ground allspice
1 teaspoons
freshly cracked black pepper
2 garlic
cloves, coarsely crushed
300g white sugar
300g Demerara sugar
400g sultanas
1
tablespoon salt
900ml white wine vinegar

Stir well, bring to the boil and
simmer gently, uncovered, for about 45 minutes or until reduced by more than
half. Stir regularly, particularly towards the end of cooking.
Store in a dark, airy place and
leave to mellow for at least two weeks before using.
